When I was visiting my grandma a while back, I did some cooking for her and her kitchen is quite little so I had to adjust to my surroundings. This recipe was super simple and quick to make. I could see this being a great recipe for kids to even help with. You can use whatever type of cheese in this recipe. I used mild cheddar but I bet pepper jack would be really good if you like a bit of spicy.
When someone says potato salad I automatically think of mayonnaise. I am not a big fan of mayonnaise. I normally try to exclude it from any of my recipes. Everyone at my work thinks it is crazy how good my Chicken Salad is and I have never even tried it. I used my dad as a taste tester. It had mayonnaise!! I have never made a pasta salad but my mom absolutely loves them. She always gets the Italian Pasta Salad from the store. I decided to try out a Greek Pasta Salad. Next will be Italian 🙂 I love that you can basically add whatever you want to a pasta salad. Some people add meats like salami or cubes of different cheese. I wanted to make this one a little more healthier so I went for only veggies.
Anytime my mom hosted a party or had to bring a dish to a party she always made her Black Bean Salsa. It is super simple to prepare and packed with flavor. Not to mention it is rather healthy for you! Last week I made it and gave out samples at the café. It was a hit! Everyone loved it. Now we are going to feature it on our menu. The best part is it is so easy to make that the kids I work love that they can do it by themselves (well except for the chopping).
This salsa keeps great in the refrigerator. It gets better day after day as all the ingredients marry together.
I was introduced to Roasted Artichoke when I went with my best friend Mary to this amazing restaurant downtown Chicago called Bandera. I have to give her a million thanks and blame her for my new love of artichokes. I have seen artichokes before and thought they looked too confusing to eat let alone cook with. But after this experience and now that artichokes are on sale at the grocery store (since they are a bit pricey), I can not stop cooking them! My dad has begged me to make Kapusta that my Auntie Sandy use to make when we lived up in Chicago. My Auntie sent me the recipe and it was finally time to make an all time favorite family recipe. Kapusta is a polish dish that is another word for cabbage. It is mainly used as a side dish to add flavors in which other foods contrast. After my dad took the first bite he was in heaven. He said now I can make it during the holidays and even in the summer as a side dish when he makes a polish sausage on the grill. My grandpa, Papa, used to like to eat this with boiled, salted potatoes sprinkled with chives.
One of my favorite breakfast sides with my scrambled eggs is breakfast potatoes. I love mine extra crispy too, as does the rest of my family. This morning I decided to wake up early and cook up some delicious breakfast potatoes. They take some extra time especially if you want them crispy.
