Black Bean Salsa

Anytime my mom hosted a party or had to bring a dish to a party she always made her Black Bean Salsa. It is super simple to prepare and packed with flavor. Not to mention it is rather healthy for you! Last week I made it and gave out samples at the café. It was a hit! Everyone loved it. Now we are going to feature it on our menu. The best part is it is so easy to make that the kids I work love that they can do it by themselves (well except for the chopping).

This salsa keeps great in the refrigerator. It gets better day after day as all the ingredients marry together.

Seasoned Mayonnaise

Let me just say I am not a fan of mayonnaise but in order for me to make one of my dishes I needed to come up with a seasoned mayonnaise and with the help of my dad (since he is a mayo guy) I managed to make a fabulous seasoned mayonnaise. I wanted to post this separately for when anyone was looking for something to jazz up their simple sandwich or a dish that asks for mayonnaise. My dad used it today on his turkey sandwich and said it added extra flavor to his simple sandwich.

I will use this in my Chicken Salad recipes that I will post soon, but until then here is the recipe.

Tomato Dijon Pasta

For this pasta dish I whipped together a sauce that is a bit out of the ordinary for a pasta sauce. It was an experiment of throwing some ingredients together and it turned out pretty darn good. I used my favorite veggie pasta, but any pasta will work for this dish. I also used green beans to add a fresh crunch to the dish.

Roasted Tomato Sauce

Tonight I was in the mood for spaghetti and decided it was about time I came up with my own pasta sauce. I did a bit of research of different recipes. After an hour of reading, I felt I could produce a tomato sauce with some unique flavors. My roasted tomato sauce has a bit of a kick to it. If you do not like spicy foods you can eliminate the jalapenos or cut the amount down. I used all fresh vegetables which I believe is what made the flavors so pronounced. I seasoned to taste, which means when you make this recipe you might add more salt or pepper to it than I did and that is perfectly fine. 🙂

Tequila Lime Chicken with a Tequila Glaze

A while ago my Aunt Teri told me about this Tequila Chicken she found on the Food Network site. Of course I was intrigued. A food with one of my favorite alcohols…. Yes please! So tonight I decided to get it a whirl and put a little spin on it.

I added the Tequila glaze recipe to the mix as a dipping sauce. My brother is all about dipping sauces for his chicken. And let me tell you this dipping sauce might be the best sauce I have ever made! I not only dipped my chicken in it, but also my broccoli, cauliflower, and potatoes. My brother was licking it off his finger.
