I have never made a pasta salad but my mom absolutely loves them. She always gets the Italian Pasta Salad from the store. I decided to try out a Greek Pasta Salad. Next will be Italian 🙂 I love that you can basically add whatever you want to a pasta salad. Some people add meats like salami or cubes of different cheese. I wanted to make this one a little more healthier so I went for only veggies.
For this pasta dish I whipped together a sauce that is a bit out of the ordinary for a pasta sauce. It was an experiment of throwing some ingredients together and it turned out pretty darn good. I used my favorite veggie pasta, but any pasta will work for this dish. I also used green beans to add a fresh crunch to the dish.
Tonight I was in the mood for spaghetti and decided it was about time I came up with my own pasta sauce. I did a bit of research of different recipes. After an hour of reading, I felt I could produce a tomato sauce with some unique flavors. My roasted tomato sauce has a bit of a kick to it. If you do not like spicy foods you can eliminate the jalapenos or cut the amount down. I used all fresh vegetables which I believe is what made the flavors so pronounced. I seasoned to taste, which means when you make this recipe you might add more salt or pepper to it than I did and that is perfectly fine. 🙂
I am growing zucchini in my garden and if you have been keeping up with my posts I previous posted a recipe for zucchini bread. Well I made enough zucchini bread to last me a life time so I decided to take my recently grown zucchini and put them in a dish. This recipe is very simple and you can make it in no time.
A few things I want to point out about this recipe are some of the ingredients I use. A couple of ingredients might be difficult to find unless you are from my area as they are local ingredients. But do not worry because I will give you options that will make this dish still taste amazing. 🙂
The first ingredient is the pasta. I used a red pepper pasta from Pasta Alley which is basically a flavored pasta that adds a kick to this recipe. You can use whole wheat pasta or any vegetable pasta that is your favorite. The second ingredient would be my Balsamic and Basil olive oil. It adds great flavor to the dish but if you do not have that you can use any of your favorite olive oils. If you do not want to spend the money on a bottle of flavored olive oil then use regular olive oil and add your own spices to it. I would recommend garlic powder and dried basil.
I went to the local farmers market where there is a stand that sells this amazing pasta. It is not your normal pasta. They are flavored and using this in cooking brings more flavor to the dish. I picked out a sun-dried tomato pasta and added a few simple ingredients to make a dish that could either be a side dish or main dish.
