Almond Crusted Chicken

This is by far one of my favorite chicken recipes. I made it a while ago and have meant to share it. My sister loves this recipe that I have had to prep the whole meal for her so she could cook it up. She likes dishes that are easy and this is an easy dish to prepare but I like to help her out 🙂

You can pair this chicken with just about any side dish. I also like to have honey mustard on hand to dip it in, but it is good by itself too.

Rum Glazed Grilled Chicken

I am finally getting some of my recipes back on here… Sorry for the lack of posting. I wanted to share this recipe I did for Father’s Day. This Rum Glazed Grilled Chicken is now one of my sisters favorite and on the top favorites of the rest of the family. It is super simple and I had all the ingredients at home so it was super convenient. 🙂 You are definitely going to want to reserve some of the glaze for dipping purposes. My brother could not get enough of it!

Almond Grape Chicken Salad

On to my second recipe for Chicken Salad, I decided to add grapes because I always heard people talking about putting grapes in their chicken salad. Figuring grapes could not be the only addition, so I added a couple more ingredients to give it a refreshed taste and nice crunch.

Sweet and Spicy Chicken Salad

I am planning on making Chicken Salad for the café and I decided to make three different types and use my dad as a taste tester. He did not object of course. It is a benefit of having me as a daughter. For my first Chicken Salad recipe I wanted to try something sweet and spicy and add a crunch to it. I decided on making sweet and spicy pecans and incorporating them in. This recipe has a few steps to it but in the end this was my dad’s favorite out of the three.

Grilled Raspberry Chicken with a Pineapple Salsa

I was looking through my freezer this week trying to decide what to marinate my chicken in when I came across my bags of frozen fruit. I saw my frozen raspberries and though why not give it a try. I threw some ingredients together to make a marinade, gave it a little taste, and thought eh not too bad. Added the chicken and covered it to marinade overnight. When I woke in the morning I went to check on my skeptical marinade. I saw that the chicken was pink and thought o gosh what have I done. But putting my optimistic mind at work, I continued with my plans for Raspberry Chicken for dinner. I grilled it up, and brought it inside, cut into it, and tasted it. To my astonishment, I could not believe the amazing flavor this chicken had! It was not an overpowering raspberry flavor. It had just the right aftertaste that gave you that hint of raspberry. It was perfect!

As I said I marinated the chicken overnight because that is the best way for the flavors to absorb into the chicken. I wanted something fresh and sweet to go with this amazing raspberry chicken so I decided since I had fresh-cut pineapple that I would work with that. I made a simple Pineapple Salsa that added to this dish perfectly. I actually used it as a dressing for my salad wedge as my side.

Grilled Chicken Skewers

The weather is getting nicer out which means time to pull out the grill. Grilling is something I decided I am going to master this year. I am always cooking my meats in the oven but now I will begin to tackle the grill. These Grilled Chicken Skewers were very simple and perfect for the beginner grillers out there. 🙂 I marinated the chicken in several ingredients that married together very nicely. In each bite you can taste each flavor.

I marinated my chicken over night. You can marinade for 2 hours and then use but the longer the better.

I served my Grilled Chicken Skewers with my Sweet Potato Cubes recipe (I cut them with my wavy cutter this time)
