Broccoli Cheese Bites

When I was visiting my grandma a while back, I did some cooking for her and her kitchen is quite little so I had to adjust to my surroundings. This recipe was super simple and quick to make. I could see this being a great recipe for kids to even help with. You can use whatever type of cheese in this recipe. I used mild cheddar but I bet pepper jack would be really good if you like a bit of spicy.

Ingredients:

2 Cups fresh steamed chopped broccoli (you can use 16 ounces of frozen broccoli–just make sure it is cooked)

1 Cup Italian bread crumbs

2 eggs

1 Cup shredded mild cheddar cheese

Preheat oven to 375 degrees. Line a baking sheet with foil paper and cooking spray.

In a large bowl combine all ingredients. If it is too wet where it wont hold a ball shape, add a wee bit more bread crumbs.

Shape into about 1 inch balls. You want them to all be the same size so they cook evenly. If you decide to do larger size balls you will need to cook them a little longer.

Bake for 25 minutes or until balls are crispy brown. Flip about halfway through.
