Rum Glazed Grilled Chicken

I am finally getting some of my recipes back on here… Sorry for the lack of posting. I wanted to share this recipe I did for Father’s Day. This Rum Glazed Grilled Chicken is now one of my sisters favorite and on the top favorites of the rest of the family. It is super simple and I had all the ingredients at home so it was super convenient. 🙂 You are definitely going to want to reserve some of the glaze for dipping purposes. My brother could not get enough of it!

Ingredients for Rum Glaze: (enough for 4 chicken)

1/2 Cup light brown sugar

1/2 Cup Rum

1/2 Cup light corn syrup

6 Tablespoons Dijon mustard

2 Tablespoon red wine vinegar

2 Tablespoon unsalted butter

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon cinnamon

4 Boneless skinless chicken breasts

Combine all ingredients in a sauce pan. Bring to a boil and simmer for about 5 minutes. Allow to cool to room temperature before adding chicken

Divide the sauce into two bowls. Marinade chicken in half of the sauce. Reserve the remaining sauce for glazing and dipping.

When it is time to grill the chicken, after it has marinated for several hours or overnight, you will want to divide the reserved glaze. I used about 1/3 of the glaze to grill with and kept the rest for dipping. Start grilling chicken and brush with glaze several times throughout cooking.
