Banana Muffins

Standard

I have attempted different banana muffin recipes and I have finally came up with a muffin packed with banana flavor. I always seem to get on a banana kick and then after a few days I get bored and move onto something else. This always leaves me with a few bananas left over which then gives me the perfect opportunity to put those overly ripened bananas to use. The key to the perfect banana muffins or even banana bread is to use very ripe bananas. So do not throw those brown bananas in the garbage, instead make some delicious banana muffins. 🙂

Ingredients: (makes 12-14 muffins)

1/3 Cup milk

1/4 Cup vegetable oil

1 egg

3 ripe bananas (about 1 Cup), mashed

2 Cup all-purpose flour

1/2 Cup packed brown sugar

2 teaspoons baking powder

1/2 teaspoon salt

Preheat oven to 325 degrees and line muffin pan with liners or spray with cooking spray.

Blend together milk, oil, and egg until pale yellow. Add mashed bananas.

Add flour, brown sugar, baking powder, and salt. Blend until just incorporated. You do not want to over mix. Batter will be thick and lumpy.

Using a cookie scoop, fill muffin cup with two scoops.

Bake for 15-17 minutes until top is firm and toothpick comes out clean.

ENJOY!!!

About kristinegough86

I have the passion to bake and love trying new recipes! I work at a school for children with disabilities as a manager of a cafe. This cafe allows the students learn the ability to work with the public and in the near future I am going to be able to bake with the students and let them learn about the love and passion there is to baking. :) I prefer baking over cooking although I do love to cook as well. I hardly ever repeat a recipe. I love my family, dogs, friends, and job. One day I will have my own bakery and I can not wait. Until then I am going to continue baking my little heart out.
