Blueberry Muffins

I have been trying to come up with a Blueberry Muffin for the café. I wanted one that would be simple, light, and full of flavor. After several adjustments I came up with a Blueberry Muffin with just that. I did not want a muffin that was dense and heavy. This muffin is light and perfect with a cup of your favorite morning coffee.

This is a small batch of muffins so if you need to make more than 8 then double or even triple the ingredients.

Zesty Dijon Chicken

I am sure everyone is realizing how much I love chicken by now. I am not one to make the same chicken recipe over and over, even though I do love all my chicken recipes. Trying something new is always exciting especially when it turns out delicious!

I paired this Zesty Dijon Chicken with my Dijon Wavy Potatoes and Simple Green Beans.

Dijon Wavy Potatoes

Here is yet another potato side dish that is absolutely scrumptious! I love flavoring up my potatoes, let alone any vegetable I cook with, and I went to the store this evening and they were having a sale on Dijon mustard. I decided that was going to be my star ingredient of the night.

I cut these potatoes into wavy chips using this awesome wavy cutter that my sister got me for Christmas. I love kitchen gadgets and was very excited to use it. If you do not have a wavy cutter then cut your potatoes into simple circles or even cubes.

I used Yukon Gold Potatoes because I love the creaminess these potatoes have. You can use any of your favorite potatoes but keep in mind the cooking time might vary.

Berry Bars

I finally got around to posting my recipe for my Berry Bars. This is one of my dad’s all time favorite bars that I make. I have made them only a few times and each time I have made them, they turned out good but not perfect. After several tries I have finally perfected the recipe. I knew it would take time and I am thrilled to share this amazing recipe with everyone. There have been several people who have asked for this recipe and I wanted to make sure it was exactly to my specifications before handing it out.

The best thing about this Berry Bar recipe is you can make it using whatever berries you want to use. As you can see I used blueberries because those are my dad’s favorite. I have used raspberries, blackberries, peaches, strawberries, and I have even mixed the fruit to make an assorted berry bar. I use only frozen fruits for this recipe. Depending on the type of fruit you use it will cause the baking time to vary. Fruits with more liquid, like blueberries, are going to take more time than frozen peaches. But I will explain the perfect way to tell when your bars are done in my directions.

Graham Cracker Cupcake with Marshmallow Buttercream Frosting

I decided to go through my cabinets and see what ingredients I had to bake into something scrumptious. I immediately saw my graham crackers and marshmallows and remembered what a hit my S’Mores Cookies were that I was determined to make a Cupcake with these ingredients. I am not calling this a S’Mores Cupcake because I decided not to add chocolate to it. So I kept it simple. I had never worked with marshmallows in a frosting before so I was a little skeptical if it would even turn out. When I think of marshmallows I think of ooey gooey mess. Surprisingly this frosting was very simple and turned out perfect for this cupcake. It couldn’t have been any better.

Maple Chicken with Pear and Green Pepper Rice Pilaf

I was trying to add to my chicken recipes. I went to the store today and literally stood by all the produce to try to pick out which one to use in my dish. Pears it was. Then everything just fell into place. Green peppers caught my eye. I thought brown rice would add texture. And maple syrup would add the perfect glaze to the chicken.

The maple syrup does seem a little weird but it made for the perfect glaze. I added pepper to give it some kick so it was not super sweet.
