I absolutely love red potatoes. Using red potatoes to make mashed potatoes is my favorite but I decided to do a baking/ roasting method this time. Normally when I bake my potatoes I season them with olive oil, salt and pepper. Very simple. I wanted to add some more flavors and went through my cabinet and found some ranch seasoning packets I normally use to season my popcorn (yes ranch seasoning in popcorn is amazing!) These Ranch Red Potatoes came out perfect and were a huge hit with everyone in my family.
4 cups cubed red potatoes with skins
2 tablespoons olive oil
2-3 Tablespoons ranch seasoning
Preheat oven to 375 degrees and spray baking sheet with cooking spray.
Cut red potatoes into cubes all about the same size to allow for equal cooking.
Place in bowl and coat with olive oil. Add seasoning and toss to coat.
