Cinnamon Pecan Coffee Cake


I bought a bag of cinnamon chips and I was determined to make a coffee cake with them. I have never used cinnamon chips so I figured that there would be chips all throughout the cake. I was wrong. They melted causing this amazing gooey cinnamon goodness throughout. Pure perfection!!


1 Cup unsalted butter, softened

1 Cup sugar

2 eggs

1 teaspoon vanilla extract

3/4 Cup applesauce

2 1/2 Cup all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 10 ounce package (1 2/3 Cup) cinnamon chips

1 cup chopped pecans

1 Cup powdered sugar

3-4 Tablespoons water

Preheat oven to 350 degrees. Grease and flour a bundt pan.

In your stand mixer, cream together butter and sugar. Beat in eggs one at a time and then vanilla. Add apple sauce.

In a separate bowl, sift together flour, baking soda, and salt. Slowly add to butter mixture.

Stir in cinnamon chips and pecans. It will look like you are using a lot of cinnamon chips but you will definitely want that many. They will melt into pure goodness.

Spread evenly in your prepared bundt pan.

Bake for 50-55 minutes or until a toothpick comes out clean. Allow to cool for about 15 minutes before flipping over on a plate.

Once cake has cooled for about 30 minutes, it is time for the glaze. Combine powdered sugar and water until glaze forms. Add powder sugar to thicken and more water if it is too thick. Drizzle generously over top of cake to add more sweetness.
