Triple Threat Cookie


What is a Triple Threat Cookie you may ask? This scrumptious little treat is packed with chocolate! It is a chocolate cookie with white chocolate chips, semi-sweet chocolate chips, and peanut butter chips. If you are a chocolate lover, then this is the cookie for you! I brought this cookie into work and my coworkers said it tasted like a brownie. I baked them until they were just done to keep that soft cookie feel to them. I have never really ventured into a chocolate cookie. I figured it was time to try and these turned out just how I would imagine them. TASTEFULLY SCRUMPTIOUS!

Ingredients: (makes about 42 cookies)

2 1/4 Cup All-purpose Flour

1/2 Cup unsweetened cocoa powder

1 teaspoon baking soda

3/4 teaspoon salt

1 Cup light brown sugar, packed

3/4 Cup sugar

1 Cup unsalted butter, softened

3 eggs

2 teaspoons vanilla extract

1/2 Cup white chocolate chips

1/2 Cup semi-sweet chocolate chips

1/2 Cup peanut butter chips

Preheat oven to 300 degrees and line baking sheets with parchment paper.

With a stand mixer, beat butter and both sugars until light and creamy. Add eggs one at a time. Add vanilla and beat until fluffy.

In a separate bowl sift together flour, cocoa, baking soda, and salt.

Slowly add flour mixture into butter mixture. Dough will be soft.

Stir by hand white chocolate chips, semi-sweet chocolate chips, and peanut butter chips until all are incorporated.

Drop 1 inch cookies onto baking sheet.

Bake for 15 minutes. Center will be slightly soft. Allow to cool and set on baking sheet before transferring.
