Peanut Butter Cookies

As I have said before, I love anything peanut butter. Surprisingly I have never tried a peanut butter recipe before. O wait… I tried one a long time ago, and it did not turn out so well. One of my very few failures in my baking extravaganza. So I decided it was time to make a peanut butter cookie recipe that was to all my specifications. It has to have a soft center, a crunchy outside, and FILLED with peanut butter flavor. This cookie meets all of those requirements and by following this recipe you will have a peanut butter cookie everyone will love.

Ingredients: (makes about 30 cookies)

1 1/4 Cup All-Purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

3/4 Cup (1 1/2 sticks) unsalted butter, room temperature

1/2 cup sugar

1/2 Cup brown sugar, packed

3/4 Cup smooth peanut butter (chunky if you want nuts in your cookie)

1 egg

1 teaspoon vanilla extract

Sugar for topping

Preheat oven to 375 degrees. Line baking sheets with parchment paper.

With your electric mixer, cream butter, sugar, brown sugar, and peanut butter until smooth and creamy. Add egg and vanilla.

In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add flour mixture to peanut butter. Beat until smooth.

Drop cookies on lined baking sheets.

Sprinkle top of cookies with sugar. Using a fork, press down to form crosses. Dip fork in sugar to help prevent sticking.

Bake for 8-10 minutes, just until edges are slightly golden. They will look a little undercooked but that is how they stay soft.
