Apple Cider Salad

Fall time always makes me want to go to the local market and buy some Apple Cider. There is a market a few miles from my house that has amazing apple cider slushy. Everyone in town knows that when Fall time arrives to head on in for a cup of Apple Cider Slushy. Since fall has finally arrived, I figured it was time to incorporate my favorite seasonal drink into my meal. I wanted to have a crisp fresh salad to pair with my main dish this evening so I decided to make an Apple Cider Salad. I used romaine lettuce, crisp apples, and celery and dressed it with an apple cider vinaigrette. It was refreshing and simple to make.

Ingredients:

2 Romaine Hearts, chopped

1 Gala Apple, chopped

4 stalks of celery (center with celery leaves is my favorite part), chopped

1/2 Cup Apple Cider

1/4 Cup olive oil

1 Tablespoon apple cider vinegar

1 Tablespoon Honey

1/2 teaspoon salt

1/2 teaspoon pepper

pinch of cinnamon

In a large bowl, mix together romaine, apples, and celery.

In a small bowl whisk together remaining ingredients. Season to taste by adding more salt or pepper.

Pour vinaigrette over salad and toss until coated.

I have the passion to bake and love trying new recipes! I work at a school for children with disabilities as a manager of a cafe.
