White Chocolate Berry Cupcake


This White Chocolate Berry Cupcake is a nice treat for your morning breakfast or to serve with coffee or tea. I made a simple White Chocolate Cupcake, filled it with a mixed berry compote, and topped it with a Berry Cream Cheese Frosting. If you are not one for white chocolate, use your favorite Chocolate Cupcake as a substitute.

White Chocolate Cupcake

Ingredients (makes about 18 Cupcakes)

1 1/2 Cups All-purpose Flour

1 teaspoon baking powder

1/2 t salt

1/3 Cup unsalted butter, room temperature

3/4 Cup sugar

2 eggs, room temperature

6 ounces white chocolate, melted and slightly cooled

1 teaspoon vanilla

1 Cup milk

Preheat oven to 325 degrees. Line Cupcake pan with Cupcake liners.

In a medium bowl whisk together flour, baking powder, and salt.

Using your electric mixer, cream together butter and sugar for 3 minutes. Add eggs. Slowly add melted chocolate. If your chocolate is still quite warm add small amounts at a time so it does not cook the egg. Add vanilla.

Alternately add flour mixture and milk. After adding all ingredients, mix for a couple of minutes, scrapping the bowl if needed.

Fill cupcake liners 2/3 full. Bake for 18-20 minutes until toothpick comes out clean. Allow to cool completely before filling and frosting.

Mixed Berry Compote


12 ounces frozen Berry mixture, thawed

1/4 Cup sugar

1 Tablespoon cornstarch

In a pot combine all ingredients. Bring to a simmer for 3 minutes. Using a whisk stir occasionally and smash out any large fruits. Allow to cool and thicken before filling the cupcakes.

Berry Cream Cheese Frosting


8 ounces cream cheese, room temperature

1/4 Cup unsalted butter, room temperature

1 teaspoon vanilla

3 Cups powdered sugar

1/2 Cup frozen mixed berries, thawed

Cream together cream cheese and butter until fluffy. Add vanilla. Slowly add powdered sugar.The frosting will be thick so when you add the berries it will not make it into soup.

Add berries and beat for a couple of seconds, just until the berries mix in. If needed, add extra powdered sugar to thicken it.

Assembling the Cupcake

Once cupcakes are cool, take out the center of the cupcake. Add enough filling to fill hole. Top with frosting. I put a dollop on top and use an icing spatula to smear it around.

Top with shaved white chocolate (optional).
