White Chocolate Berry Cupcake

This White Chocolate Berry Cupcake is a nice treat for your morning breakfast or to serve with coffee or tea. I made a simple White Chocolate Cupcake, filled it with a mixed berry compote, and topped it with a Berry Cream Cheese Frosting. If you are not one for white chocolate, use your favorite Chocolate Cupcake as a substitute.

Slow Cooked Honey Glazed Chicken

Honey Glazed Chicken sounded perfect to make this weekend. I normally cook my chicken in the oven but this time I decided I wanted to try something a little different. I wanted to slow cook it in my crock pot. The chicken absorbed all the sweet flavors and every piece was juicy and tender. Since we are slow cooking the chicken this recipe takes about 2 – 2 1/2 hours to make. So make sure if you are planning this recipe according to your schedule. I actually made this at night and then re-heated it in the crock pot the next day for dinner. It came out amazing!

I used 6 boneless skinless chicken breasts for this recipe. If you plan on only making with less than 6 chickens then cut the liquid ingredients down.

Chocolate Chocolate Chip Zucchini Cake

I was in the mood for chocolate this weekend and decided why not try chocolate and zucchini. I know it sounds a bit weird but it was probably one of the moister cakes I have ever made. The shredded zucchini added tons of moisture to the batter and it helped give the cake a fluffy texture. I made my cake in a loaf pan but it can be made in any size pan. The cooking time might differ a little depending on what pan you use. If you do not want to make it into a cake, another option is to make cupcakes. I do not frost this cake but if you want to add more chocolate to it, a chocolate ganache would be perfect.
