Banana White Chocolate Cupcakes with Honey Cinnamon Frosting


I absolutely love bananas and I had some bananas that were turning into mush so I decided to make a moist banana cupcake. I wanted to add some more flavor to them so I decided to use some white chocolate. If you do not like white chocolate then you can use semi-sweet or dark chocolate. Whichever your favorite is works fine. I went through my cabinet and was looking for something I could make into a frosting. I feel like I am always doing a vanilla or chocolate frosting. I saw my honey sitting there and thought I would give it a whirl. The sweet honey and subtle hints of cinnamon paired perfect with this banana white chocolate cupcake. I got wonderful reviews from all my co-workers!

Ingredients: (makes 12 cupcakes)

1/4 Cup unsalted butter, room temperature

1/3 Cup sugar

1 egg

1 teaspoon vanilla extract

1 1/4 Cup cake flour

1 1/4 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 Cup mashed bananas (I used 3 medium size)

1/2 Cup white chocolate chips, chopped

Honey Cinnamon Frosting (recipe follows)

Preheat oven to 350 degrees and line cupcake pan with cupcake liners.

With electric mixer, cream together butter and sugar. Add egg and vanilla.

Sift together flour, baking powder, baking soda, cinnamon, and salt. Alternate adding flour mixture and banana into mixer.

Mix until just combined. Do NOT overmix!

Fold in chopped chocolate. Scoop 2 Tablespoons of batter into each cupcake liner.

Bake for 15-18 minutes until toothpick comes out clean. Cool and top with Honey Cinnamon Frosting.

Honey Cinnamon Frosting Ingredients:

1 1/4 Cup powdered sugar

1/2 Cup unsalted butter, room temperature

1 Tablespoon honey

2 teaspoon cinnamon

Cream all ingredients together until fluffy and easy to shape on a cupcake.
