Pumpkin Cookies

Fall is starting to get to me especially since today it was a bit chilly outside. Not my cup of tea but what better to do than a little baking. 🙂 I have this desk calendar that has a cookie recipe for each day. One of the kids I work with asked me to make this recipe so of course I did. I twisted the recipe a bit to make it tastefully scrumptious and they turned out to be these little balls of soft pumpkin goodness. Did I mention that they are healthy for you? Must have slipped my mind. 😉 Each of these cookies only have 75 calories and 0 grams of fat. So go ahead have more than one. 🙂

Ingredients (28 cookies)

3/4 Cup pumpkin purée

1/2 Cup fat-free vanilla greek yogurt

1/2 teaspoon vanilla extract

2 Cups all-purpose flour

1 teaspoon cinnamon

1 teaspoon pumpkin pie spice

1/2 teaspoon baking soda

1 Cup raisins

3/4 Cup light brown sugar

Preheat oven to 350 degrees. Spray baking sheets with cooking spray.

In a large bowl, stir together pumpkin, yogurt, and vanilla until creamy and smooth.

In a separate bowl, sift together flour, cinnamon, pumpkin spice, and baking soda. Stir in raisins and brown sugar.

Add dry ingredients to pumpkin mix. Stir until everything is incorporated. Dough will be sticky.

Drop spoonfuls about 1 tablespoon in size onto baking sheets.

Bake for 12 minutes until firm. Cool and store in an airtight container for up to 5 days.

I have the passion to bake and love trying new recipes! I work at a school for children with disabilities as a manager of a cafe. This cafe allows the students learn the ability to work with the public and in the near future I am going to be able to bake with the students and let them learn about the love and passion there is to baking. :) I prefer baking over cooking although I do love to cook as well.
