I love chocolate chip cookies and brownies! So I decided to make a cookie that would incorporate both treats. It is a simple recipe it just takes a bit of time due to the two different recipes you have to work with but, when you are finish baking these cookies you will not want to stop eating them. The chocolate chip cookie has a nice soft crunch to it while the middle has that oooey gooey brownie. 🙂 I hope you all enjoy this recipe!!
Ingredients: (makes about 20 large cookies)
1 box of your favorite brownie mix (bake them according to their package and allow to cool)
1 Cup unsalted butter, room temperature
1 1/2 Cups Packed light brown sugar
2 large eggs plus 1 egg yolk
1 Tablespoon vanilla extract
2 1/2 Cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 Cup miniature semi-sweet chocolate chips
Preheat oven to 350.
You first want prepare your brownies according to the box. Bake them and allow them to cool until ready to prepare your cookies.
In a medium size bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
With your stand mixer cream together butter and sugar for about 1 minute until fluffy. Add eggs and vanilla. Blend for about 2 minutes until nice and fluffy. Slowly add dry ingredients. Add chocolate chips and mix until incorporated.
Before we assemble cookies you need to refrigerate cookie dough for at least an hour in order to stiffen up a bit.
After brownies are cool and dough has been refrigerated for some time, it is time to assemble these delicious cookies.
You are going to want to grab a little over 1/4 Cup of dough and flatten a bit and make a crater (see picture below). Put about a 1 inch square of brownie in the middle and wrap the cookie dough around the brownie.
Roll cookie dough into a ball and place on baking sheet. Only put 6 cookies to a sheet because they expand. Do not press cookie ball down. It will spread out while baking.
Bake for 16-18 minutes until lightly golden brown. Allow to cool and enjoy with a cold glass of milk. 🙂
