I was rummaging through my mom’s old recipes and came across this cheesecake bites recipe. My mom use to make these for us kids when we were little tikes. I thought might as well give them a whirl and sure enough they came out just like they did when my mom made them. DELICIOUS!!!
Ingredients (makes 10 x 6 inch pan or 8 x 8 inch pan):
1 Cup all-purpose flour
1/3 Cup packed brown sugar
6 Tablespoons butter, softened
8 ounces Cream Cheese
1/4 Cup sugar
2 Tablespoons milk
2 Tablespoons lemon juice
1/2 teaspoon vanilla
Preheat oven to 350 degrees.
Blend together flour and brown sugar. Add butter in small pieces and then blend together until mixture is crumbly. Reserve 1 Cup of mixture for topping and pour the rest into your 10 x 6 or 8 x 8 inch pan. Do not grease your pan. Flatten the mixture onto the pan and then place in oven and bake for 10 minutes.
While crust is baking prepare your cream cheese mixture.
Blend together cream cheese and sugar until nice and smooth. Add egg and blend until incorporated. Add milk, lemon juice, and vanilla and blend until completely incorporated.
Pour mixture on top of crust and smooth out. Sprinkle the reserved 1 Cup of topping all over.
Bake for 22 minutes. Let cool and then it is ready to be devoured. If you like them extra chilled store them in your refrigerator.
