Blackened Tilapia

I really enjoy fish and I am always trying to find new recipes that sound tasty. I use to only eat fish if it was battered and fried. Then I finally decided to try fish not covered in batter. To my amazement I loved it. I was in the mood for something spicy one night and I had some fish in the freezer…. I know frozen fish is not going to be as good as fresh fish but it was what I had on hand. I search the internet for something spicy and remembered I had a blackened chicken the other night and it was divine. So that is where my blackened tilapia came from. Of course you could use any type of fish really. I love tilapia so I went for it. The flavors were perfect!

I found my recipe on Food Network by Bobby Flay. It is basically the same recipe except I bake mine in the oven instead of on the stove. I hope you all enjoy!

Chocolate Malt Milkshake Cupcake

Chocolate Malt Milkshake Cupcakes

I remember growing up and my dad making either chocolate milkshakes or chocolate malt milkshakes. They were quite tasty so I figured I am going to find a recipe that incorporated that malt flavor into a cupcake. And of course it must be chocolate.

This recipe makes 28 cupcakes and 24 mini cupcakes. So if you do not want to make a lot just cut the recipe in half.

Shredded Chicken Sandwiches

I know I already put this recipe in here for the chicken and dumpling  recipe but it was so good I had to make its’ own post. This is a super simple recipe that would be great for a quick meal especially on those late work nights or even for the kids. You can dress this sandwich up to each person’s likings.

For my chicken sandwich I added pickles and dipped it in barbecue sauce. My brother dipped his in buffalo sauce. You could use it as a dipping sandwich or squirt some sauce directly on the chicken. This is your own creation. Maybe some honey mustard or even just ketchup.

Nana’s Shepherd’s Pie

Every time we go to Disney World we have to stop at Epcot’s United Kingdom Rose and Crown Pub where my mom can get their amazing Shepherd’s Pie. Last night I wanted to surprise her with my version of shepherd’s pie. I knew I was not going to get it to be the exact Disney version but I was going to give it a try. Normally they use ground lamb in their dish but I decided to use ground beef. I added a few other ingredients as well.

In the end it turned out delicious and my mom said it actually tasted just like how her mom would make it for her, Auntie Sandy, and Auntie Nancy. She said just add a little ketchup on the side and it would be exactly like my Nana’s. This is why I decided to name it Nana’s Shepherd’s Pie.

I made this in a 5 inch ramekin but you can also make it in a small casserole dish as well.

Chicken and Dumplings

I absolutely love chicken noodle soup but I do not really recall ever having chicken and dumpling soup before. I remember in high school my mom making this Chicken and Dumpling sort of dish from a box one time and it was so delicious. I always assumed that is what chicken and dumplings should taste like. Boy was I wrong. I made Chicken and Dumpling Soup last night and WOW! I asked myself why I have never made this before!? Balls of bread like dough soaking in chicken noodle soup. YES PLEASE!

I do not know about you but whenever I have chicken noodle soup I must have some sort of bread or cracker to go with it. Preferably an enormous roll, maybe even a loaf, for dipping pleasure. Being able to basically make a soup where the bread is already incorporated in and soaking up all those flavors made this extremely exciting to try. I hope you all enjoy this recipe as much as I did.

Mini Jelly Donuts

Jelly Donuts…. Who does not love jelly donuts. Well I have good news for you about this recipe. They are not your normal jelly donut. Why you might ask? Because they are baked and not deep-fried. So this means they are just a wee bit healthier for you. I like that!

I used a raspberry jam for the filling but you can really use any type of jam. Strawberry, blackberry, blueberry, anything.

Some equipment/ utensils you will need for this recipe would be a mini cupcake pan and a small round pastry tip. If you do not have a pastry bag, no worries. You can use a Ziploc bag and attach your pastry tip to it. I normally use disposable pastry bags you can get at Wal-mart for a few bucks. I love them. Super easy clean up.

Cherry Cheese Danish Loaf

Cherry Danish and a Cherry Cheese Danish with a spot of tea on my mom’s ‘Margaret’ Tea Set

A Danish and a spot of tea for breakfast. Definitely a nice way to start the day. This morning I woke up determined to try out a Danish recipe. There have been several I have found that require you to chill the dough or leave it in the refrigerator overnight. I just do not have time for that. I want something quick and simple. I came across this recipe while browsing the web and saw that it required no refrigeration. Sounded perfect to me. There were a couple of ingredients I switched around and made it into my own. The end result was spectacular. I cannot stop nibbling on them!!

I took some pictures of my baking process. I know some recipes, when explaining them; make it sound a bit confusing. I figured this would help ease your way through it. I am like a kid. I need pictures with my story. J

This recipe was intended to make one large Danish loaf but I cut it into two and made two separate flavors. My mom doesn’t like cheese so I made one with just Cherries. If you intend to make this into one loaf then when rolling out your dough it will just be a little bit thicker which might cause the baking time to be a bit longer.

Alternatives: I made this into a Cherry Cheese Danish but the sky’s the limits on what type of filling you want to use. You could do just an Apple filling but buying apple pie filling. Another option would be a chocolate cheese where you add chocolate chips to the cream cheese filling recipe. Try your favorite and let me know what you think.
